Kumpir is one of the fast-food prepared using roasted potatoes, and it is believed that the word kumpir comes from the Croatian word “krumping”, which means potatoes. In Artakoy in Istanbul, which is prepared in many countries, but with different ingredients that are mixed with potatoes, such as butter, cheese, cream, minced meat, corn, and red beans, let's make the kumpir.


How to prepare kumpir:


  • 6 large sweet potatoes.
  • A cup of shredded mozzarella cheese.
  • A cup of grilled chicken or beef sausage, chopped.
  • A quarter cup of boiled corn.
  • ¼ cup of sliced cooked mushrooms.
  • ¼ cup of chopped black olives.
  • A quarter cup of boiled red beans.
  • 2 sweet green pepper pods, sliced.
  • 4 tablespoons of mayonnaise.
  • 4 tablespoons of milk.
  • Half a teaspoon of mustard. A tablespoon of lemon juice.
  • Half a teaspoon of salt.
  • Black pepper to taste.
  • A little olive oil.                                                                               



How to prepare the kembe:



1-   The oven is placed at a temperature of 200 ° C.

2-After washing the potatoes well to get rid of dirt and dust, they dry well and do not peel.

3-Stitch a fork or stick inside the potato from several places.

4-Brush the potatoes with a little olive oil, and sprinkle a little salt and pepper over them.

5-Wrap each potato in aluminum foil well, and place it in the oven for about 40 minutes, until it is soft.

6- Remove the potatoes from the oven, make sure they are done, and then make a slit in half.

7-Empty the potatoes from the inside, and put the mashed potatoes on another plate.

8-Add mozzarella cheese to the mashed potatoes and mix until well combined.

9-Return the mashed potato mixture to the inside of the potato and add the mushrooms, corn, olives,peppers, sausages, and beans on top.

10-Return the potatoes for another 10 minutes to the oven, until the potatoes are browned.

11-Mix yogurt, lemon juice, mayonnaise salt, and mustard in a small bowl to form a tasty sauce.

12-Add the sauce to the potatoes immediately after taking them out of the oven, then serve hot and sprinkle a little mozzarella cheese over it as desired.
